6 slices pancetta

6 bocconcini or 1 large mozarella

6 cherry tomatoes

melted butter

easy pancetta tarts 

let me start by saying that I hate (HATE) making pastry. jamie says it's 'easy peasy', nigella claims to have the fool proof recipe...I don't buy it

well, actually I do buy it

I buy it frozen from the supermarket: puff, short, filo...life is too short for a fiddly, fussy, floury mess. buy it pre-made, thaw what you need. end of story. more time for a cheeky aperitif to calm the nerves

back to the recipe:

cut: puff pastry into 6 inch squares

place: a sexy, salty, pepper crusted coil of pancetta in the middle

top: it with a cherry tomato which has been cut into 6 wedges so that it opens out like a flower

add: a few slices of bocconcini. brush the top with some olive oil or melted butter

bake: for about 15 minutes in a hot oven

done

* I think that my friend bobi made these for me once. you can also chop up some sundried tomatoes and marinated artichokes or mushrooms. whatever takes your fancy!
