'I DO' blueberry breakfast 'gateau'
This is a cake that nobody is going to say 'No' to
(and if they do, they aren't worth marrying!)
Take the Swedish Crepe mix, add 1 tblspn of baking
powder, 2 1/2 cups of water, 1 egg and 1 cup of
buttermilk. Whisk it all around and get rid of the
lumps.
Heat your skillet and pop about 1 teaspoon of butter
in it. When the butter is foamy, pour 1/2 cup of
pancake batter in. Drop 10-12 fresh blueberries into
the pancake and let the bubbles form around them.
Flip the pancake and spread another teaspoon of
butter onto the cooked side of the pancake. After a
couple of minutes, slide the pancake onto a plate and
top it with a teaspoon of peach or apricot jam, then
take an almost-ripe peach and slice very thin wedges
in a single layer around the top of the pancake.
Keep making the pancakes...the mix makes at least
10, and keep buttering, jamming, peaching and so
forth until you have a stack the size and shape of a
gateau.
On the very top, add a good tablespoon of butter
and as much jam, then more peach slices and a last
scatter of blueberries, then pour hot golden syrup
over the whole thing.
Slice it in wedges like a cake and serve with cream,
ice-cream, flambeed with spiced rum...
Or swap bananas for the blueberries and mango for
the peaches...
Or make a savoury version by spreading cream
cheese between the crepes and alternating layers of
smoked salmon, smoked trout, shaved fennel,
crumbled eggs and top with dill and caviar and creme
fraiche...
