fried panettone with quinces, blood orange and marscapone this is a cheeky christmas breakfast for the two of you to share before the day gets crazy it just isn't christmas without a panettone. it's the poinsettia of baked goods! traditionally sliced into wedges, it occurred to me that if you slice it into rounds, it fits perfectly into a skillet... I had some quinces left over from the syrup that I'd made for my roast pork, add a little butter (when does that ever hurt?) and hey presto: heat: some butter in a skillet and place a 1 inch round of panettone into the foaming butter. fry until golden brown on both sides peel: and slice: a blood orange into segments remove: any seeds or core from the cooked quinces arrange: the quinces and orange segments on top of the panettone and top with a dollop of marscapone or creme fraiche serve: with quincy champagne cocktails
