serve with:

  • panettone with quince and blood orange

quince champagne cocktail

because I made the quince syrup for my roast pork a day ahead, I had some left over poached quince. into the blender it went. hit frappe I did. champagne cocktails will never be the same again!

spoon about 1 teaspoon of pureed quince into a champagne flute. add 1 sugar cube, drench the cube in a few drops of angostura bitters and about 1 capful of brandy or liqueur. top with champagne and garnish with a strip of orange zest.
