6 large, ripe tomatoes

5 cloves garlic

1 teaspoon salt

1 teaspoon freshly cracked pepper

1-2 teaspoons sugar

1 x 4inch sprig rosemary

total time: 1 hr

you will need:

  • medium saucepan
  • small container (for storage)

the perfect tomato sauce 

chop: tomatoes roughly. discard tough stems, but preserve any juice and seeds

chop: garlic roughly

combine: all ingredients in a medium saucepan and cook on a low heat for 1 hr. sauce will reduce and sweeten. add more sugar / salt / pepper to taste

remove: rosemary sprig

store: in the refrigerator

serve: as a pasta sauce, pizza sauce or to top meat dishes
