2-4-6-8 cherry amaretto cake This is a sensational cake. The cherry season is so short and it is always that once-a-year treat to bake with fresh cherries that I never mind the task of slicing them in half and pitting them. Whether I bake a crumble, a pie or a cake, I usually sneak either Amaretto liqueur or marzipan into the recipe as I love the combination of the flavours. The Amaretti cookies are a great cheat treat as they soak up some of the cherry juice and keep cakes and pies from getting soggy. They are also about the easiest 'crumble' topping in the world! pit the cherries and let them sit, with their juice, in a small bowl mix 1 tblpsn Amaretto liqueur and the cornstarch and pour over the cherries preheat oven to 375f beat the butter in a mixing bowl until fluffy and pale add sugar and beat to combine add eggs one at a time and beat to combine measure the flour, add the baking powder and a pinch of salt pour the flour into the mixing bowl and beat to combine add the sour cream and Amaretto liqueur and beat to combine pour the batter into a greased and lined cake pan crush the Amaretti cookies (roughly) and add to the cherries tumble the cherry/cookie mix (and all liquid) onto the top of the cake batter
