1 cup caramel sauce (store bought)
1/2 cup maple syrup
1/2 cup dark rum
you will need:
Pumpkin cookie with Maple Rum Caramel
You will need a batch of pumpkin spice cookie dough, here's the link to that recipe:
Half a batch actually.
Butter a 9 inch pie dish and pre heat the oven to 400f.
Press the cookie dough into the pie dish, spreading it to the sides. Bake for 20 minutes.
Mix the caramel sauce ( I buy 'Bonne Maman' sauce in jars), rum and maple syrup and pop in the fridge whilst the cookie is baking and cooling.
Whip the cream.
Spread the caramel sauce across the top of the pie and pile the billowy, whipped cream on top.
Slice into wedges and serve with strong coffee
