crocodile brownies I woke up to the news that Steve Irwin had died. For some reason, it didn't seem possible. He was just always humming and thrumming with life that it was impossible to imagine that he was dead. Had never stopped to consider myself a fan; you see, I don't really watch tv at all. I turn it on when I leave the house so that the dog has something to entertain her whilst I'm gone. I set it to the 'Animal Planet' and head out the door. Invariably, I would come in, be greeted by the dog (ecstatic after enduring an 'Animal Rescue' marathon) and we would sit down and Steve Irwin would be booming at me. By osmosis, I became addicted to his over the top antics. I'd sit there with the dog in my lap thinking, 'Oh surely, he can't...' And surely he did. So I was a little dazed by his death and, for no good reason, decided to make some brownies as a tribute. Brownies are so lumpy and bumpy and gnarly that the whole tray almost resembles a croc torso (but smells infinitely better!) So, these super easy, super quick brownies have chunks of nuts and caramel chocs to give them extra bumps. Add nearly a pound of chocolate and you're in swampy-choc heaven. Top it all with green icing... I use Ghirardelli chocolate when I cook. Buy slabs of the stuff at Trader Joes. For these brownies, I used the choc-chips and I also had a bag of their oozy caramel chcolate squares. You could substitute Rolos or Caramello chocolate, but I'm a Ghirardelli boy. Here we go: Get a good sized saucepan and place the butter over a medium heat. Pour the choc chips on top. Stir to combine and melt. Add the golden syrup and sugar. Remove from the heat and whisk the eggs in, one at a time. Be fast and thorough, so the eggs don't start to cook and leave white threads in the batter. Add the salt and flour. Stir to incorporate. Add the walnuts and, lastly, the caramel chocs, chopped roughly in half. Pour the batter into a 11 x 9 pan lined with greased foil. (Doesn't matter if the pan is a little larger or smaller) Bake in a pre-heated oven (350f) for 20-25 minutes. When cooled, slice into 20 brownies. Caramel Croc Icing Melt 2oz of caramel chocs, add 1 1/4 cups icing sugar, 1 tspn green food colour and a couple of teaspoons of hot water. mix. add more water if you need it. drizzle over the brownies. | ||||
