base:

1 1/2 cups self raising flour

1 egg

2 tblspns olive oil

1/2 cup milk

non-stick cooking spray

topping:

2 tspns olive oil

1/2 medium onion, chopped

300g / 10oz lean lamb minced / ground

50g / 2oz pinenuts

1/2 cup chopped mint

140g / 5oz tub Leggo's tomato paste

tzatziki and fresh mint leaves to serve.

active time: 30 minutes

total time: 40 minutes

you will need:

  • baking tray

middle eastern lamb pizzas

Sift: flour into a medium sized bowl. Beat together egg, oil and milk and stir into the flour to make a soft dough. Turn the mixture out onto a floured board and knead lightly, shaping into a ball.

Heat: olive oil in a skillet / frying pan and add onion and lamb. cook until onion is wilted and lamb is browned, approx 3-4 minutes. Stir in pinenuts and Leggo's tomato paste.

Roll: pastry out to 1/4 inch (3mm) thickness into either 2 oblong or round shapes and place onto a greased / lined baking sheet. Lightly spray pastry with cooking spray and spoon filling evenly over each pizza.

Bake: in a pre-heated oven at 200c / 400f for 12-15 mins or until golden brown.

Serve: with spoonfuls of tzatziki and fresh mint leaves.

the pizzas can be sprinkled with dukkah, a middle eastern spice mix.
