2 1/2 pound tri-tip roast
olive oil
1 tspn cayenne
1 tspn pasilla chili powder
1 tspn achiote powder
1/4 tspn cumin
1/4 tspn onion powder
2 tspn garlic salt
pinch salt flakes
few grinds black pepper

1 shot of silver tequila


 serve with mighty Mannix guacamole

serve with thelovebite margarita

 

 you will need:

  • baking dish
  • foil
10 minutes active time
2 hrs marinating
30-40 minutes roasting

 

spicy tequila spiked tri-tip roast

This dish is so easy and tasty it should be sitting on a bar stool fielding pick-up lines!

mix the spices, salt and pepper.

score the top side of the meat (the fattiest side) about 1/4 inch into the flesh.

rub the spice mix all over the meat and into the scored cuts. Allow to sit 2 hrs at room temperature or overnight in the fridge.

pre-heat oven to 430f

drizzle enough olive oil over the meat to cover the surface.

roast 20 minutes, pour a little more oil over the meat. Cook another 10 minutes for medium rare or 20 minutes for medium.

remove from the oven, drizzle a little tequila over the roast and cover immediately with foil. Let sit for 20 minutes.
