the perfect meatloaf pre-heat: oven to 180c combine: beef, pork, onion, bacon, breadcrumbs, salt and pepper in a large mixing bowl. mix by hand mix: ketchup, worcestershire sauce, chili and egg soak: brown bread in the milk, squeeze the excess milk out of the bread and add the bread to the meat mix pour: the sauce mix into the meat mix, roll up your sleeves and mix thoroughly with your hands *if adding grated carrot or red pepper, mix these in now grease: a baking dish with a little oil or butter shape: meatloaf into a long 'loaf' shape mix: extra ketchup and worcestershire sauce and baste the loaf with this criss cross: extra bacon rashers across the top of the loaf bake: covered with foil for 1hr, remove foil and bake extra 45 minutes until cooked. remove from oven, cover with foil and let sit for 15 minutes before serving serve: with 'smashed vegies', steamed broccoli and tomato sauce *smashed vegies: peel and chop 2 potatoes, 1 rutabaga (swede) 2 parsnips and 2 carrots. vegetables should be chopped into equal sizes. boil in a pot until tender. drain thoroughly, add 25g butter, 2 tblspns olive oil, fresh craked pepper, salt and a little grated nutmeg. mash roughly and serve with extra butter and grated parmesan on top **lighten it up: use ground turkey instead of beef
